OUR PRODUCE

We proudly support Ollin Farms, Munson Farms, Diaz Farms, and The Lyons Farmette for our produce.

OUR BEEF

Buckner Family Farm - Their 100% shorthorn cows are natural grazers that thrive on the open prairies of Boulder County. Shorthorns finish out earlier than most breeds and produce a well-marbled, tender meat - even with 100% grass finishing.

Elevation Beef - Wagyu-influenced genetics raised on Northern Colorado grass and a local brewers’ grain mix (yes, cows love beer!) then dry-aged for 21 days creates more intense marbling, flavor, and tenderness

Corner Post Meats - Our grass fed and pasture raised animals live a natural life as nomadic grazers free of vaccinations, chemical dewormers, antibiotics and growth hormones. We also avoid the use of chemical fertilizers, pesticides and herbicides.

OUR CHICKEN

Red Bird Farm - We proudly support Red Bird Farms located in Englewood, CO. Their birds are raised without the use of antibiotics and fed no animal byproducts, ever. They are raised cage free and without hormones or steroids. Red Bird Farms chicken is also gluten free. The chickens are healthy, safe, and clean.

OUR PORK

Buckner Family Farm - The Berkshire hog, Buckner Farms heritage breed of choice, is known for its rich flavor and dark, naturally pink meat. Another robust animal, Berkshires are well suited to our cold winters and warm, dry summers. The meat Berkshire hogs produce is prized by chefs the world round.

OUR LAMB

Buckner Family Farm - Columbia and Rambouillet ewes - breeds renowned for a heartiness to match the western landscape - are bred with either Hampshire or Dorset rams to produce lamb noted for its mild flavor and tenderness. Our lamb, a favorite in restaurants and markets throughout Colorado, is truly special and is the meat that built our business.

OUR EGGS

We source our eggs from SkyPilot Farm located in Longmont, CO . Their happy hens, who spend all year on pasture, eat a corn-free, soy-free and GMO-free feed to supplement to their fresh greens, bugs, and worms.
